  1. Write down the recipe for one batch: ingredients, weights, number of pieces it yields. Pull out your latest invoices for the prices per kilo.

The rules to follow with AI in this job

Always do this

  • Allergens: AI prepares a draft, and you confirm every cell against the label of the product delivered. An error puts a customer in danger.
  • The words in your shop window bind you: “homemade,” “all butter,” “traditional,” “organic,” the origin of a flour. Write only what is true and verifiable.
  • A production cost or an order quantity calculated by an assistant gets recalculated by hand on one recipe before any decision.
  • Name, phone, an allergy reported on an order form: these are personal data. Keep only what is necessary, for the duration of the order.

Never hand this to AI

  • Asking an assistant about hygiene rules, temperatures, or shelf life: refer to your food safety plan and the official texts.
  • Drawing up an apprenticeship contract or a schedule without checking the collective bargaining agreement: night work, rest periods, workers under 18.
  • Having AI create the photo of a cake you don’t make, or having it write fake reviews.
